SALMON ORANGE WITH ORANGE ZEST – ORANGE JUICE – SOY SAUCE – HONEY – GINGER – MINCED GARLIC & TOPPED WITH GREEN ONIONS

THE MEDITERRANEAN MICROWAVE

For 4:

–salmon (size of 4 decks of cards, 1 pound)

–orange zest (1 teaspoon, bottled)

–orange juice (juice of 1 fresh orange squeezed)

–soy sauce (one-quarter cup, bottled)

–honey (one-quarter cup, bottled)

–ginger (1 teaspoon, bottled)

–minced garlic (1 tablespoon, bottled)

–green onions (fresh, 2, chopped)

–pepper (no salt)

–olive oil

1 – Place the salmon in a covered baking dish with the soy sauce.  Squeeze 1 orange for its juice, atop the salmon.  Season with orange zest, pepper, minced garlic, honey, ginger, and olive oil.  Sprinkle 2 chopped stalks of green onion atop the salmon.

2 – Microwave on high for 7 minutes.  Salmon should be flaky.

3 – Serve the salmon hot.

An Appetizer:  SESAME EGGPLANT DIP WITH SOY SAUCE – MINCED GARLIC – LEMON JUICE – RED WINE – EXTRA VIRGIN OLIVE OIL

THE MEDITERRANEAN MICROWAVE

For 4:

–eggplant (fresh, medium size)

–soy sauce (3 tablespoons, bottled)

–minced garlic (bottled, 1 tablespoon)

–lemon juice (2 squirts, bottled)

–red wine (2 tablespoons)

–extra virgin olive oil (1 tablespoon)

–sesame seeds (2 tablespoons, bottled)

1 – Prick the eggplant all around, generously.  Place in the microwave, on an uncovered plate, and microwave for 5 minutes.  Turn over, and then microwave for 5 minutes more.  Let cool.  Then cut into 2 pieces, and rake out the pulp, discarding the skin.

2 – Criss-cross the pulp with a knife.  Then place in a mixing bowl.  Add soy sauce, minced garlic, lemon juice, red wine, sesame seeds, and extra virgin olive oil.  Stir well.

3 – Refrigerate for at least 2 hours before serving.  Serve with crackers.

Spicy beef & vegetable stir fry

First time I made stir fry I didn’t even have a wok to cook it in. I searched for a recipe, since a friend of mine told me I had to try it out, you have to understand it was years ago when such dishes weren’t even on the menus of restaurants in Zagreb. After finding the recipe, the only thing left was to actually find a store selling all of the ingredients needed, even felt like I was on a treasure hunt. Nevertheless I found all the ingredients and used the largest pan I had to prepare it in.

Grilled chicken, rice, sweet & sour sauce

I always loved Asian food, my sister was the one who first introduced me to it. Actually she didn’t, she order Asian food for herself and our mother, and since there were some leftovers I tried. It was the most usually ordered dish here – pork with bamboo and shiitake mushrooms. In the days to come I probably went to an Asian restaurant or ordered food from one about 2 times a week, before I started making it myself. Today I can’t wait to find a new recipe to try myself!
