I’ve seen recipes for meringue roulades over the years, but assumed they were well beyond my baking abilities. My efforts to produce a passable Swiss roll were hardly confidence building.

But finding myself with a quantity of egg whites that needed using, I decided to give it a go.

Lemon Meringue Pie 

It’s summer here, let switched to a pie dessert….. this pie combine some of the best flavour and texture. It start with flacky oil pastry which filled with a thick, smooth, tangy lemon curd.

The lemon filling topped with a bilowy Meringue that is lightly sweet and completes the flavour as texture of this pie. Hmmmmm…..my taste buds start perking up when I think of all that lemon goodness so let start to make a pie….😊🙏

INGREDIENTS:

For the pie crust;

  • 1 1/2 cup flour
  • 1/2 cup butter
  • 1/2 cup shortening
  • 1/4 tsp salt
  • 1 egg
  • Cold water as needed

For the lemon curd;

  • 1 cup sugar
  • 1/3 cup cornstarch
  • 1/8 tsp salt
  • 3 egg yolks
  • 1 1/4 cups milk
  • 3 tbsp butter
  • 1/4 cup lemon juice
  • 1 tsp lemon zest

For the Meringue;

  • 4 egg whites
  • 1/2 tsp cream of tartar
  • 1/2 cup sugar
  • 1/2 tsp vanilla extract
