8 ounces white confectionery coating, divided
8 ounces semi-sweet chocolate chips
1/2 cup salted peanuts
1/2 cup miniature marshmallows
1/2 cup crisp rice cereal
1/2 cup coconut
1/2 cup red and green candied cherries
In a heavy saucepan or double boiler, melt 6 ounces confectionery coating and all of the chocolate chips. Stir in the peanuts, marshmallows and cereal. Pour onto a greased 10 inch pizza pan or a foil-covered 10 inch circle of cardboard. Spread to even out top. Sprinkle with coconut and top with cherries. Melt remaining confectionery coating; drizzle over pizza. Refrigerate.
Makes 16 to 20 servings.
Don’t you love a great tasting and easy Chocolate Brownie recipe? This is almost as easy as opening a box mix only without the added preservatives. I love to eat them with or without frosting. I also love to put chocolate chips in them. I think my favorite part about this recipe is not only how wonderful it tastes but that it only makes enough for an 8” pan. Now of course you can double or triple this recipe but I made this for the grandkids and I really didn’t want a ton of leftovers!

What is better than pancakes? – Pancake muffins!
I love preparing cupcakes and muffins because they’re smaller versions of cakes and pies that I would usually make, and pretty easy to share with friends and family. At least once a week I prepare a different batch of cupcakes, and bring them with me to pubs where I meet with friends. If not in pubs, we as friends usually organize pancake parties where we meet, watch TV shows or movies, and eat pancakes. That’s when I got the idea to make pancake muffins with chocolate chips and blueberries, and Nutella was a no-brainer, so I covered them in Nutella.
If you love pancakes, and haven’t tried pancake muffins so far, you should start mixing the batter and turn on the oven!

Today a friend of mine is celebrating her birthday. As every year I’m planning on making her a cake as a surprise, or some kind of a dessert like cupcakes, but has to be something with chocolate. As she will be reading this post, I have to say I still don’t have an idea what I’m going to make, even though there is a master plan in action. The surprise is probably going to be in a day or two when we catch up, and I have to admit I can’t wait!
