Beef Rendang Sous-Vide

Beef rendang is the national dish of Indonesia. I’ve already blogged my recipe for Rendang many years ago. Back then, I didn’t think it made sense to prepare it sous-vide, as an important part of making Rendang is reducing and browning, which does not happen in sous-vide cooking. However, since then I have learned a lot about hybrid approaches, where the sauce is reduced and separately from the meat, which is browned briefly and then cooked sous-vide with the sauce that has already been reduced, such as in my sous-vide version of Ragù alla Bolognese. And so it was time to try and make beef rendang sous-vide using a similar technique.

And guess what? It turned out great! And it takes less tending than regular Rendang, which requires quite a bit of stirring, especially towards the end. I’d have to do a side-by-side comparison to confirm, but the tenderness…

The outer cover or skin of all carbohydrate rich foods like cereals, roots and tubers contain Vitamin B1 (Thiamine) , which plays major role in carbohydrate metabolism.

If nature has made some foods rich in carbs so, it has also placed a key for their better digestion. But ignorantly or in fashion, we remove the outer layer thus discard the naturally gifted key for it’s digestion.

So, eat potato, sweet potato, carrot etc. with skin and prefer red or brown rice over white rice and whole wheat instead of refined one in daily diet for better digestion.

Change is the only constant in life

Everyone loves to talk about change, but when change happens unexpectedly, it usually means starting over and leaving one of our comfort zones behind us.

It doesn’t matter what the cause is; a relationship, a job or where you live.

When your stability and routine is upset, it can be difficult to know how to start over and find a fresh start.

But when we look back on the changes that have happened in our lives, such as an old job, a previous relationship or where we lived ten years ago, today is better.

It can take time to adapt, but in the end, we generally feel good about the choices and decisions we made.

Change in life is not always easy.

But when it comes to publishing today, making changes is the only way to move ahead.
