Cauliflower Steaks with Chimichurri Sauce

The Friendly Epicurean

This summer I’m trying to eat as little processed food as I can. I’ve been trying to stick with whole food meals made at home. I love to use cauliflower because it’s so versatile. I roasted my cauliflower steaks for this recipe but you could also pan fry them or grill them. Since I eat a lot of cauliflower, I’m always looking for new ways to prepare it. To make cauliflower ‘steaks’, I cut my cauliflower into 3/4 inch slices. Using a large head of cauliflower makes it easier. It’s also important not to separate or cut the stalk, since the stalk is what holds the cauliflower steak together. Cauliflower steaks are a great meat substitute, much like portobello mushroom caps. Chimichurri sauce pairs really well with cauliflower steaks. It’s traditionally used as a condiment for beef steak and other meat in certain South American countries but goes well with…

Laughter Is the Best Medicine

You have probably heard the term laughter is the best medicine. It may even be a bit cliché at this point. However, it still holds quite true. If you are feeling down, forcing yourself to smile or laugh can turn your mood around.

If you are in need of a pick-me-up, make sure you hang out with people who are upbeat. If you are with others who are down as well, it’s going to be difficult for each of you to get out of your funk.

No one can truly be happy 100% of the time. If you are unhappy more than you are happy, it could be time to seek some help. But, part of your therapy could very well be to use laughter.

There are clinics that promote laughing as part of the group. It entails gathering in a circle and forcibly laughing while the group participates. Depending on who is running the event, each person may take a turn laughing and then the group joins after the last person completes the exercise. It seems strange to outsiders, but participants are proponents of the methods. They get a good feeling after the sessions, and many say they make great friends in the process.

Laughter can help lower stress as well. It releases endorphins in your brain which are responsible for you feeling good. It is even believed to help in producing antibodies which can fight disease. This could be how the phrase, laughter makes the best medicine, came about.

You may feel strange yourself early on when incorporating laughter into your routine. But, even if it is forced, as you do more you’ll get more used to it, and it will stop feeling strange over time. You will have the tools you need to change your mood. After a while, you will find yourself laughing for real rather than forcing it.

It will improve your general outlook on life. People you associate with will also take notice and want to hang out with you more. Give it a try for a consistent period. Notice the changes that you experience in your feelings. It is likely you will never go back to the way it was. While no one can guarantee using laughter will make you live longer, it won’t hurt you in any manner. The question is, why wouldn’t you use it if you’ve got nothing to lose?

Keep Yourself Free from Destructive Thoughts

Do you find yourself thinking negative thoughts? You learned these early on, and they get reinforced on a daily basis. It happens on television, the internet, and at work. It happens when you talk to people in your neighborhood. But, what happens when those thoughts turn from negative thoughts to destructive ones? And what if you direct those thoughts at yourself?

Destructive thoughts can be a dangerous path to follow. Hopefully, if they are happening to you, they won’t last, and you can get back on track. However, should they continue indefinitely, this should be cause for alarm.

Destructive thoughts, such as feeling hopeless, can turn into depression and despair. This can lead to other behaviors such as heavy drinking or drugs. It can make you withdraw from life and feel like you have nowhere to turn.

If you have been feeling down for any length of time, find someone who can help. If you are feeling depressed and even suicidal, don’t wait to take action. Depression is widely believed to be treatable, and treatment doesn’t always have to be with drugs. A qualified professional will know the right course of action to take. It may even be covered by insurance.

If you feel like you are not yet at a point of being depressed or thinking destructive thoughts, but the thoughts are still negative, you should be able to shake free from this. Start by listing what you have in your life. This doesn’t mean the material things. It’s the people in your life that love and care for you. If your health is good, this is another item to go on the list. These are items that make you grateful.

Visualization can also help alter your mood and your mindset. Think about times when you were happy. What was present during those times? Was it your friends and family? Whatever ingredients were present, try to recreate them.

Although this article gives some suggestions for things to try when you are feeling down, it is not meant to be used as advice. Only a qualified professional can diagnose if there is a problem and what to do about it. Don’t take advice from others who are not qualified. Family members may have good intentions, but they probably have not been trained to handle extreme cases of destructive thinking. Even if some are, it’s usually not a good idea to treat family members.

Sparkling Raindrops

Poetic Words

raindrops 2

I love sparkling raindrops

when they fall one by one

slowly dripping down

after a hot summer’s day

short time rain

making everything sparkling

when the sun appears

stretching a rainbow across the sky

there are glittering raindrops everywhere

on flowers and on leaves

on the blades of grass

making it seem

as if I’m walking on glittering emeralds

fallen from up above

sparkling raindrops

dripping down from the rooftop

shimmering puddles

created from raindrops

making a world

that seems like fantasy

I love sparkling raindrops

coming down on me

cool and refreshing

as I dance in the summer rain

they are great to see

sparkling raindrops

resemble tiny diamonds

flashing rainbow colors

so very delightful to see

on a summer afternoon

as the breezes

blows the clouds across the sky

leaving behind

a world filled with sparkling raindrops
